Snacking at Home

Get creative with these simple and easy recipes to help pass the time while staying at home. 

With boredom setting in as the stay at home order continues, it can be hard to find activities to occupy the time. Many restaurants and businesses have been forced to close, limiting available food and drink options. These easy recipes can be a quick fix to quarantine boredom while also providing delicious snacks without leaving home. 

Whipped Coffee

This easy whipped coffee recipe that became popularized on the social media app tiktok will satisfy anyone’s caffeine needs while offering a unique twist on the typical cup of coffee. 

Ingredients: 

2 Tbsp. instant coffee/espresso 

2 Tbsp. sugar

2 Tbsp. hot water

Milk or milk substitute 

Ice (optional)

Add the instant coffee, sugar, and hot water into a bowl. Using a whisk or electric hand mixer, whip the coffee mixture until it forms stiff peaks (about 5-10 minutes). In a glass, add as much milk and ice as desired. Next, add the whipped coffee mixture on top of the milk. Enjoy! 

 

Homemade Ice Cream:

As the weather gets warmer, save a trip to the store and cool off with this simple homemade ice cream!

Ingredients:

2 Cups heavy whipping cream

1 Can sweetened condensed milk (14 oz)

1 Tsp. vanilla extract 

Whip the whipping cream by pouring the cream into a stand mixer or bowl and whisk until stiff peaks form. Next, in a separate bowl, mix the condensed milk with the vanilla extract. Combine the two mixtures by slowly folding the condensed milk mixture into the whipped cream. Spread the combined mixture into a glass pan and place in the freezer for at least six hours. Scoop the ice cream and top with any desired toppings. 

 

Easy Tortilla Chips:

Craving a salty snack, but don’t want to (or can’t) go out? Spend some time making these quick and easy tortilla chips for a savory snack. 

Ingredients:

Corn tortillas

3 Tbsp. olive oil

Preheat the oven to 400 degrees. While the oven heats up, cut the tortillas into quarters.  Spread the olive oil onto a baking sheet covered in foil. Coat each side of the tortilla in the oil on the baking sheet before placing them on the sheet. Bake the chips in the oven for 12-15 minutes or until golden and crispy. Sprinkle the chips with salt when they are still hot. Serve them with a desired salsa or dip or eat them plain. 

 

Strawberry Banana Smoothie:

Cool down with this quick and easy five ingredient smoothie recipe.

Ingredients:

2 Cups of frozen strawberries 

1 Ripe banana 

1 Cup of almond milk (can be replaced with any other type of milk)

1/2 Cup of plain (or vanilla)  greek yogurt 

1 Cup of ice

In a blender, add the strawberries, banana, milk, yogurt, and ice. Blend until smooth. If the mixture is too thick, add more milk and re-blend. If it appears too thin, add more fruit. Pour the smoothie into a cup and serve immediately. 

 

3 Ingredient Brownies:

These delicious brownies only require three ingredients and take under 30 minutes to make. 

Ingredients: 

1 ¼ Cup of Nutella

2 Large eggs

1/2 Cup of all purpose flour

Start by preheating the oven to 350 degrees and greasing a 9×9 inch baking pan. Next, add the ingredients into a bowl and mix until the batter is smooth. Pour the batter into the baking pan. Place in the oven and bake for 15 minutes. Set the brownies out to cool, then cut and enjoy!

 

While staying at home may get boring at times, it is important to limit going outside in order to slow the spread of COVID-19. Hopefully these recipes add a little excitement to staying at home while also providing those who make them with a delicious snack.
